We present a home-style version of a beverage featured on a new menu. This is a large-volume prepared mix that is loaded with the flavours of the Christmas time, rendering it excellent for a celebration. Reserve the remaining cordial to use in morning drinks, sweets, or to make additional servings of the drink.

The Bikini Cocktail

Makes enough for 10 servings

To make the Clementine Syrup (yields 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar

To make the Premix (produces 850ml, enough for 10)

400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch

Directions

For the Cordial: Put the listed ingredients into a pan, heat until it reaches a simmer, stirring so the sugar melts. After that, turn off the heat and let it to cool completely. Pour to a sealable bottle, cap it keeping it in the refrigerator, where it will keep for about a month.

Preparing the Cocktail Base: Mix every spirits and syrup into one sizeable container, leave to sit for an hour, then pass it through preferably using a fine cloth, making it perfectly clear.

For serving: Measure 85ml of the premix into your mixing glass packed with ice, gently stirring gently for about 60 seconds to cool it down. Pour to a cold coupe glass or a similar vessel, garnish with the cranberries and finish using a brief mist of mandarin oil over the drink.
